Our favorite–Oatmeal Raisin Banana Muffins!

We love, love, love banana bread in this house–in any form! And muffins are always the best for on the go. Or for breakfast, lunch…you get what I mean. I’m not a professional baker, but my son & I make awesome banana bread. That means awesome muffins! This is our recipe:

  • 1/2 cup oats
  • 1 cup all-purpose flour
  • 1/2 cup whole wheat flour
  • 3-4 ripe bananas
  • 1 cup brown sugar
  • 1/2 cup olive oil
  • 1 egg
  • 1 tsp baking soda
  • 1/2 tsp salt
  • raisins (as many as you want!)
  • 1/2 tsp cinnamon (I love cinnamon, but it’s optional)

Set oven to 350. Makes about 18 kid-sized muffins, 12 large.

In our house, we like to mix everything all together (or at least the kids do), but it’s always better to mix the dry and wet ingredients separately before putting them together. We bake them for about 15 minutes with our convection oven, so that time may vary. Just bake them until they are a little golden on top.
